- Meats, fish & organs are cleaned, descaled, slice or chopped in sterile prep facility.
- Quickly placed on drying racks in careful batches.
- Air dried gently at 68 °C for 18-24 hours depending on protein.
- Set out to cool in stainless steel trays.
- Packed in foil-lined packaging to reduce UV exposure and extend shelf-life.
